sugar leaf do you defoliate them and dose resin get thicker the close you are to finish line

Personally no, all sugar leaves stay unless that leaf has a specific reason to be removed, even when finished, I remove all fan leaves and leave the sugar leaves on during the dry then trim as needed once dry

IMO they protect the bud during the dry as they curl around each bud
 
You want to leave sugar leaf on until your hanging.
I turn the buds upside down so I can see the stem deep inside the bud. Then reach in with my scissors and nip the stem off as far inside the bud as I can reach with scissor tips. Save the sugar leaf for ice hash.

If your doing large volumes I guess it's ok to trim them off with the leaf. But I'm growing small amounts of the best weed I can grow so I try and do a little nicer job of finishing. After removing leaf and stems. I crispy them up on the outside and give them a going over with a bud brush. Then begin drawing moisture out from deep inside the buds.
using jars, great care must be taken bringing moisture levels down that you don't induce mould.
Always be gentle and try not to bang your bud around so your sugar stays on the flower.

Your plants look great but I think they need a few weeks yet. Don't hurry now! let them sugar up.

Yep I leave them in to protect the buds from drying too quick, like a little cocoon on each bud, without the fans on the sugar leaves trim quick once dry, I usually don’t even actually snip them, usually just get your trimming scissors on th lead and rotate 90 deg to the side and It’ll pop right off and the buds will come out plenty fine for personal smoke, might need to detail a bit if you wants them just really pretty looking, but those sugar leaves are coated in trichs so if you don’t mind it, smoke em with the bud!
