i go by the french technique for meat - 1 minute rest for every minute of cooking. makes all the difference.Amen!!!

its unbelievable but like anything there is good and bad wagyu. My best mate is a steak fiend, he got some beef from the emperor of japans personal stock of kobe cows (matsusaka kobe i think) which has the highest grade of marbling u can find. The beef in the pic is from when he spent a grand on wagyu beef from the only uk people to have permission to import the shit. the best bit is he can't cook so i get to cook it all lol. Happy days.Never tried that wagyu out before a lad on another threads always going on about it and how nice it is
