at what humidity in a jar do u start to risk mold

if you drop one of those humidity packs in the jar than you should be good. ideally you want to keep it between 60% for a nice slow and cure process

Depends on temp at storage.

I have cvaults stored at 57 deg that will read about 56% .

Bring the temperature up to 71 deg and the humidity will read about 65%.

To answer your question. Anything above 66% at room temp could be at risk imo
