What is the difference between purging temps?

Ive heard that purging at lower temp makes a shatter and higher temps produce an oil. Can someone please tell me the proper temps i need to purge my oil? Also,, what temps for a shatter and what temps for an oily consistency? I kNow im purging at temps too high and my oil gets dark in color and not too tasty,,
