Will too dry air affect taste and aroma while drying?

I could not find any information about this.
Too dry makes your buds turn to powder, you lose taste and its harsh to smoke. When you trying to roll it up it's just a powdery mess. The optimal temps and humidity are 62F @62% or so I've been led to believe and it should take 10 days to dry....I've rarely hit that....The air here is either too wet or too dry. My last batch dried in 5 days @ 68f & 30% I added a small humidifier but it was not enough . A couple of days after jarring it up I added a couple of green leaves to the jars and that adds back moisture to make it rollable but it's still not ideal.....best to dry slow aim for 10 days with good air exchange........Its tricky because too wet brings on mold and too dry gets what I have this time.
