Unless you have a male producing pollen, do not use any seeds produced. They will just give you more seeds.
Because you don't smoke the bud but use it to make concentrates I would let them mature and harvest as you normally would. The way you use the actual flower are not effected by the seeds presence. But don't use them seeds.

weed with seeds isn't the end of the world ...

just carefully pregrind by hand to remove seeds that could taste bad if crushed in the grinder.

Let it ride. You need to get down with your nose in the bush and find any male parts. Look for little banana things and . You may get more seeds on the other plants. If you don’t find any it’s possible someone’s fella has prego the one.
