Got it.You're not watering empty space. You're maintaining the proper pH and ppm throughout the pot because you're fertigating. If it were plain water there would be no downside to letting it dry back. But because your water is full of salt, letting that empty space dry back is like leaving soup to summer on the stove too long. It gets salty and thick.
Add hard tap water to that equation and it gets even worse.
