You leave part of the apical bud you would normally remove during topping. Lots of pics here of folks doing it, just search FIM.

FIM is fuck I missed. You basically cut the leafs of the very top new growth sprout in half rather than cutting off. It slows the sprout to a crawl on that top. Meanwhile 2 new sprouts erupt from the sides of the sprout. You are left with 3 tops instead of the two you would have if you normally topped the plant.
