The only parts of this animal that were left behind were the gut pile, heart liver and lungs.
When the bullet pierced the neck it was at a angle in a downward trajectory and hit the lungs causing a large amount of blood to enter the chest cavity. So those parts were left for the small woodsy animals to eat (coyotes, bobcats, bald eagles , etc)

Elk cow? Is that what I'm looking at?

Looks like a lot of meat; that's for sure. 😁 What's not fit for roasting or steaks; I would suggest grinding up with pork shoulder and make smoked sausages.
Can't see the bottom video for some reason; maybe it's still processing it.

Cow elk, controlled tag for Miami unit in the coast range in the tillamook forest.
Stimson lumber tree farm, I was fortunate to be able to get an access key to there gates.
This animal will feed my family for the next year.
Yea; looks like 3-400 pounds of dressed meat; or there about. I've mostly eaten whitetail over the years; but I've had a little elk meat and it was great. It's not a real big one; from what I've seen in the wild; but big isn't always better.

I'll take quality over the amount any day.

Here’s a rear quarter of this animal, my buddy (professional butcher) deboned this in less then 4 minutes, absolutely amazing:)

Processing correctly is the key element when storing your meat in a freezer.
Just like drying your buds for a proper cure,
Not done rite and there’s no going back.
