I don't know if it's just me but, I've recently pulled out a couple things that have had a long cure, actually the one I just pulled out had a looong cure, and when I've popped the jars I get an almost fermented kinda smell, reminds me a bit of alcohol anyway. Any idea's on what/why this is? The stuff has been good, much better than when it was put up. ???

I think the stale o2. If we had vac jars, probably wouldn't get that smell as often. I'm guessing?

You can and should replace lids. The seals will go bad after lots a use. They are cheap at wallies tho
