The fatty skin near the neck is pinched off and eaten right out of oven, fatty, salty chickney goodness........

I've been wondering, do you like chicken on the bone, or like to take it all off and make it into a regular dish? I do not want to create a holy war with this question lol.

Most everybody I grew up with, we eat chicken on the bone exclusively. Even know a few people who eat the whole leg bone itself they love it so much. The actual bone- seriously. Thats going to little far though IMO. Thoughts cman?

I like the thighs and legs for dinners chew right off bone , the white meat for left over sandwiches, tacos, or sliced on plate for those who like white meat....
Our farm raised chickens are a special French type culinary meat chicken and we grow them slow for full development, way more tender, juicy and succulent than those standard fast growers....

^^^^^^ I can attest to the quality of this man's birds!!!!
the pic of those above made my mouth water!!!

I was wondering how you got them so big without pumping them with hormones like Frank "pioneered" with his university of Maryland "super chicken" breeding and feeding. :) it's amazing for a homegrown how huge urs are.

The last really homegrown chicken I had was in Indonesia and it was literally the size of a pigeon!

Me too, I grew up in the country and that's all we ate. I love me some chicken, always prefer it to beef.

It depends on the breed of chicken. commercial meat chickens are bred for large breasts, legs and thighs. Layers do not make good meat chickens
The ones in stores average around 3 to 4 lbs from what I remember. We could process sooner but we prefer a nice plump chicken,5 to 6 lbs and again we let them grow slow.
Will be taking orders for this years batches.. PM if interested could arrange meet up..
Cannot sell legally whole processed chicken. We can sell you the live bird and process free of charge or you can process, since it's your live chicken you can do what you wish, allow us to process or do it yourself...No cluck Chuck...

Interesting I spoke with a friend tonight who runs 4 houses of 15,000 birds each and he told me they mature in 36-38 days and he is losing about 4000 birds each run due to some illness where they rot basically (also known as I don't remember)
He sells the birds for 15¢ each and hates what he is doing

I grew up in the midwest and watched small german/swiss dairy farms bulldozed and replaced with factory dairy farms and beef stockades. My heart hurts for the chickens and pigs too. I love eggs/dairy/meat i just strongly disagree with how majority of it is raised/sourced.

Its kind of what pushed me into growing out own cannabis as well. My SO & sick friend just always got garbage from from clubs and clinics around Los Angeles even if you bought half a dozen "top shelf" zips you get home and you got a lot of medicore stuff that just should of been blasted with the trim.

When i eat food i like to know it was raised well and with love and i expect the same from my flowers.

this is a great article,
knowing where my food comes from is my next adventure, 35 acres and a dream. i will make it happen.
definitely want some of those french hens chickenman. i will pm fo sho.
mr. joel salatin and polyface farms' practices, is what i've planned to do with my land.
chickens n rabbits n goats n alpaca n a few cows.
i get all giddy just thinking about it.

All meats should be cooked on the bone, for flavor. :) I eat the ends of the bones (of chicken).
