She shot out more pistils! I’m ready to harvest it already! She is living her best life apparently

It's normal for the fans to start dieing. Without the nutrients they die off. At this point you can choose to harvest now, or wait out the trichomes a bit longer.

If you choose to wait keep a very close eye out for bud rot. Those fans if they decay into the buds remove them. They can cause rot. Some strains are more susceptible to it than others, that one looks strong.

I honestly think I see amber.
I am not telling you to cut, but I am saying I would cut at that point. People don't seem to care about full out amber trichs anymore. Not my cup of tea.

Smaller buds not worth hanging are trimmed onto a screen.

Yes the odor when clipping is extremely potent. As im sure your aware of now. Maybe your neighbors are to lol.
