My oldest has been smoking fish lately, those trout in the pics I put up recently got smoked, along with some others he had been saving, and he brought me over a nice batch, damn good stuff!

Perch are good eatin', white perch are probably my favorite fresh water fish. But of course, it all depends on how you cook it, and again, my taste is simple, fry it up in butter with some salt and pepper, (in the right amounts, of course, lol), and I'm happy.

Light flour dredge and pan fry.

I like my fish alive ad squirming! Last year? we slayed some tuna and as they were being filled on the way home we got to sample some straight from the fresh catch... my sushi was still moving when I ate it. :)
