Yup! I can see how that would be delicious. I'm not attached to any one method over another, NYC style and Chicago style are just two options of pizza techniques. I'll chow down on a focaccia-esque dough with a short ferment and a bunch of oil every bit as happily as a "pure" water/flour/salt/starter dough.

There are people that say that pizza is like sex, and that even when it's bad, it's good. To those people, I say they either haven't had good pizza or bad sex.

one thing I can promise you friend, is those 1911's will never be pointed at anyone from the farm... besides, our reputation isnt that bad is it?
 
Keste and John's of Bleecker are also awesome. DeLorenzo's in Jersey is great, too.

I also love me some Chicago and Detroit style deep dishes. Especially Gino's East.

What's NS style pizza like? What makes it different? Can it be replicated here?

Oh feel free to keep the pizza talk goin gents, I'm from Pictou county NS, home of the worlds best pizza. It's in my blood, and my only exception to veganism lol.

Pictou county Pizza is at its heart a chain of pizza restaurants started by a Greek dude named Spiro back in the early 90's. Namely Acropole and Sam's. What makes it unique is the sauce is dark brown and somewhat peppery and very savory, and the pepperoni used is of the highest quality. Also all the toppings on this pizza go UNDER the cheese.
There is nothing that compares for late night messy faced drunken eating. It's often served with a side of donair sauce to dip it into. Spiro sold the recipe for his sauce to franchise restaurants for $30 thou if you wanted to get in.. lol.

Oh acropole how I miss you! Home of the big slice!! lol

Ate about 8 slices of this in 4 days when I was home for my Dads funeral.

I've made a decent copy that is delicious and pretty close, but it's not quite the same.

Hey guys , ok so we can somewhat agree ,that east coast of north america has some of the best pizza in the world

North of Virginia, yes. South of there is BBQ country. Things get BAD more frequently in the midwest, though the worst pizza I've ever had in my life was from Ali Baba's here. There's good pizza in most major cities, but it can be a challenge.

Don't even get me started on California flatbreads. If it has BBQ sauce on it, it's not pizza. Fuckouttahere with that shit.

Looks like the next time I'm on the east coast, I'll be doing a pizza tour from NS to DC. I'm curious about the brown sauce, I'll have to try it to deconstruct the flavors and technique.
 
Damn! I missed the pizza discussion. In my defence i was having a really good time. :-)

So thanks again for all the info. But instead of a rifle. Mrs. Mmg just ordered a new 50” samsung tv with bluetooth to mirror our devices.

I think its a much better idea.
