the problem ios im only using 2 Tbsp of butter. (i failed the first 2 tbspn i tried.. over heated so i had to start again )

if it was a full stick or something it be dirt simple.

So 20-27min at around 250f looks pretty ideal. But .. remember .. that's the solution temperature. So if the stove is at 250 the solution will likely be colder. So you need to keep that in mind. A candy thermometer or meat thermometer will do, but I recommend an infrared or whatever they are with the friggin laser beamzzz

Use a smaller pan or smaller container inside a bigger pan filled with water. That'll give you less surface area and more temp buffer.

well fuck it, i guess ill go try.. worse case i ruin it.., right now im already given up on it.

Use the double boiler method i mentioned earlier. Put your butter in a jar with your oil and put that jar in a pan full of boiling water

You didn't ruin it?
Just sounds like you got to 215?

You didn't toss anything right?
Don't fret, there may be a chance it's already active.

Unless your saying you burnt the butter with the oil?

The perfect temp is the hard part.
I like to use oil in a pot since water doesn't reach past 216°.

Then I have a glass dish on top as the double boiler. I slowly warm up the oil until the butter in the top is stable at 220°. Just getting the temp perfect is like 1hr process.

Always wait to add the oil until the butter temp is stabilized.

@rmoltis are you using refined butter or whatever that preprocess is that you do to butter? I believe turn into ghee or along those lines...?

well i did 20 mins and i did ot get no boiling or thc turning to carbon..
i dunno. its on the stove now waiting ti be put in the container..

i have the temp right. i did the 20 mins.. so i dunno.

i have the pan thing figure out i ju8st have to move it around till you find the right s pot.

i also have the digital thermometer like you.. i guess i will just put it the container and see what happens.. as i am not gonna get bubbles unless i boil it. LOL
