The only way to do it is dedicate a non stop effort, like 10-12 hr days. When I go at it, I take time off work and tell the wife she won't see me for a few days lol. And I'll go morning to night. Gotta get it over with asap or it'll drive you wacky. Especially when you're doing multiple pounds by yourself.

learning that man. goddamn. it's like a constant stress -- gotta get this shit done so that the product can cure right without getting overly dry. only so many hours in the day though.

When we were kids, harvest times from the mountains were a "Family" thing...Trimming, cleaning, packaging, disposing (the FUN part haha 🤪🚬🥴)...Yep, FUN times! 🤣

What kind of vessel do you cure in for a crop that size? Certainly you can't be using smaller individual canning jars.. I was planning on trying to cure in a small bucket with a gamma seal/lid this time around. Seems a lot easier than burping individual canning jars.

that's what a lot of people do, and it seems to work really well (not that i have an personal experience). this round i'm still using quart jars, but won't be doing it this was again with so much product. too many jars to be burping daily.

I don't jar anymore. I use a the big ziplogs and i suck the air out and drop it in the freezer. Sometimes, I add a slice of orange or citrus skin to the bag for smell.

I use these huge smell proof heat sealable bags I got from a buddy, they can hold about 4# each. Once it's at my desired moisture content, I seal it in vacuum seal bags, quarter pound each, co2 purge them and then freeze it for long term storage.
