Hard to know what you’re thinking in terms of “big” and cutting down. I’ll cut mine down to around the size of bud pictured. That way I’m able to tease apart the bud and inspect everything inside (especially up against the stem) at harvest. Most of the time the cola isn’t just a single branch, but multiple branches and you can make your cuts along the main stem, but still leave a decent thickness in the branch.I am debating this myself, but have never done it. I would be worried it would dry too fast and I would have hay smelling buds. Do you just cut the big colas into quarters or how do you do it?
Obviously with buds with decent spacing (like one below) you could easily cut it down more, but as you’ve mentioned you don’t want it drying out too fast and want to leave part of the branch to retain moisture.
And of course it really depends on your drying temps/humidity. If it’s hot you’ll want to leave larger sections. But if it’s cool or moisture it’s a big mistake to try and keep large vanity colas or hang whole plants/branches.
