we have been using verdolaga locally to extract Malic acid to use a plant stress reducer and for various cosmetics I am developing.
I found this is way higher than any we found in typically used fruits and of course it doesn't have the sugar implications and is just better all around since Verdolaga is rarely considered a human food and so there is no conflict of interest right now.
I have found it used as a common salad leaf here across the med, its really like spinach and is the same family, but elsewhere in the world, it really is an ignored plant to the large extent and so I feel to use it has less impacts on human food supply than trying to extract from say Spinach itself.
the other thins is i am developing a chart to help explain what the common plants mean here. What they are telling uis about local conditions and so on. Using these indicator plants as a way to inform us of change and or help us better plan longer term integrated soil fertility programs.
I have a new field we are opening up, this we have segmented to carry out various tests and of course to help keep the wolves from the door by making a bit of cash via food sales :-)
