No, sadly leaves cannot regain color but the fact that they didnt get worse is a good sign. Still, for flower fan leaves are not a big deal after the 3rd week. Many will be lollipoped, some people even remove them all towards the end. New leaves however should come good, if they dont there might still be something going wrong. The small leaves are the important ones for flower.
Maybe they need more water since you defoliated them and they were growing but be careful with that, always lift the pots if you can and get used to know when they need water by weight because their needs will change. After defolation if theyre not stunted they drink more, the first 3 weeks of flower they also drink more, heavy stretch but towards the end of the grow they start drinking less.
I use fabric pots and I have overwatered and damaged my plants but theyre way safer than plastic pots and even if you over water and damage the plant its very hard to kill the roots because the excess humidity gets evaporated quicker.
That said Im glad to know that theyre liking what youre doing! It shows, they recovered and have grown quite a bit.
