It's so funny that this thread turned to booze now, I was literally just on youtube researching how to make sugar wash ethanol because I'm tired of having dirty glass.
What styles of beer are you brewing? Sounds kinda like some kettle sour/bretty goodness. Beer yeast is awesome in bread too, as is Champagne yeast if anyone's a baker. They won't carry the rise on their own, but they definitely add something to the crumb and flavor.
Anyone looking for a scholarly intro to brewing should look into the MBAA Beer Steward Handbook, it's an outstanding resource.
