You have my respect. Do you use pecan wood? That's my go too. I use hickory and apple wood as well but mixed in with pecan wood depending on the meat. Of course slow and low.🍽
This year was a competition blend oak, apple and hickory I believe. Last year was pecan. It barely hit 200°F. That meal and some Buddha kush put me out lol.
