All the keto breads I have tried all have the same problem. They taste fine but they don't 'crumble' as you chew, they bind tighter and turn into playdoh. So, I make some keto pancakes and use those for bread.
have you tried using a bread maker? I have one from Philips. I don’t know how, but with any set of products, it makes wonderful crumbly bread. worth a try, it's a magician.

Many of us have diabeties or are borderline. We don't want to get any worse, so we change our diet to Keto to combat the evil sugar demon.
What are your favorites? Has anyone done any Keto Kannabis Kookies yet?

Sofar, I'm working on a keto version of my favorite, Bisquick. I think I've almost got it.
There is a nut/seed loaf recipe I love (I'm not on a low carb diet, I just like seeds/nuts) but it is keto/Paleo friendly and can be made gluten free as well. I got it from here The Life-Changing Loaf of Bread - My New Roots https://www.mynewroots.org/site/2013/02/the-life-changing-loaf-of-bread/

If you used infused oil (olive or coconut) you'd have a good little low mg slice of high protein toast.
You can forgo the sugar and replace it with a keto friendly version or leave it out entirely.
 
Last year my wife was diagnosed with diabetes. We're both pretty good cooks and I don't mean opening boxes or cans so I took this as a challenge. I no longer use any sugar (Monk fruit sweetener and stevia) lots of almond flour, oat flour and coconut flour and still make her favorite oatmeal cookies.

I've tried several bread recipes, usually calling for 6 eggs and none of them come out with a crum. She found a brand at the store she likes but it's 20gm carbs per slice and she's given up on the keto breads.

I've been thinking instead of trying to make a 2-3gm sliced bread loaf maybe using 1 cup of vital wheat gluten flour as a base with yeast and then substitute the rest of the wheat flour with almond, oat and coconut flour. This would lower the carbs and still give a nice crum to the bread. I plan to give it try sometime this week as she gets close to finishing the last purchased loaf. I'll let you know how it goes.

Now baking with THC/CBD extract couldn't be easier. I usually have a liter of infused coconut oil of each in the fridge and found using half butter half oil in any recipe, even breads works like magic with the sugar replacements I mentioned above which I use 50/50 always in baking, give the finished products a better sweet taste over using just one or the other.

Oatmeal Craisin Cookie recipe
1/4 C butter
1/4 C infused oil
1/2 C keto sugar
1/4 C keto brown sugar
1 tsp vanilla extract
1 egg
1 tsp cinnamon
1/2 tsp baking soda
1/2 tsp salt
3/4 C Almond flour
1 C oats
1/4 C Craisins

Cream butter, oil and sugar. I've found using a combination of keto sugars better than choosing just one so I use 1/4 C Monk fruit sweetener and 1/4 C Stevia. Trauvia makes a keto brown sugar with 12g carbs per 1/4 C.

Add cinnamon, egg and vanilla, mix. Add the flower, oats, baking soda, salt, craisins, combine.

Heat oven 350F

Make approx 20 cookies and add 2 white chocolate morsels per cookie. Adds very little sugar but huge addition to taste or you can use sugar free morsels.

Cook for 8-10 minutes.

12g carbs from the keto brown sugar, 10 from almond flower, 100 from 1 C oats and 30 from the craisins. Aprox 150 grams of carbs. 150 divided into 20 cookies is 7.5 grams of carbs per cookie. Add in the 2 vanilla chips and it's 8 grams per. 3 following a healthy meal is doable.
 
Keto Pancakes
1 Cup Almond flour (pack the measuring cup)
1/4 teaspoon salt
1 Tablespoon Monk Fruit sweetener (or any non-carb sweetener)
1/2 teaspoon Baking Powder
1/2 teaspoon Baking Soda
-Mix all dry ingredients
2 Eggs
1/4 Cup Half/half (milk or water works too)
Mix wet and dry.
1/4 Cup batter in hot nonstick pan, cover cook until bubbles turn over and finish cooking covered. About 2 gms carbs each cake.

Butter cakes and serve with keto syrup🤤
 
Cranberry Sauce
1 Cup water
1 Cup Sugar substitute of choice (I used 1/2 C Monkfruit sweetener & 1/2 C Stevia)
3 Cups Cranberries
Bring 1 C water to boil. Add sugar mix well. Add Cranberries, simmer 10 minutes stirring constantly.

Add 1/4 Cup THC and/or CBD coconut oil extract optional😉
 
Have you tried fermented grape shugar its supposed to be for diabetics.basicly bacteria eats its eat and shits out 0 cal sweet poop.doesnt taste bad

If I can make an infused syrup out of the product a lot of people will be very happy
Right now they are using a 1/4 to 1/2 TEAspoon of rich syrup

Off on another tangent
 
Jam

1 pound Strawberries
1 Cup Monk Fruit sweetener
2 Tbls Lemon juice

Cut up and mash berries
Place in a pan and add Monk Fruit
Slowly bring to a boil while mashing the berries
Boil for 10 minutes constantly stirring
Allow to cool and jar
Keep in the refrigerator up to 4 weeks
3.1 total carbs per ounce😊
