Last year my wife was diagnosed with diabetes. We're both pretty good cooks and I don't mean opening boxes or cans so I took this as a challenge. I no longer use any sugar (Monk fruit sweetener and stevia) lots of almond flour, oat flour and coconut flour and still make her favorite oatmeal cookies.
I've tried several bread recipes, usually calling for 6 eggs and none of them come out with a crum. She found a brand at the store she likes but it's 20gm carbs per slice and she's given up on the keto breads.
I've been thinking instead of trying to make a 2-3gm sliced bread loaf maybe using 1 cup of vital wheat gluten flour as a base with yeast and then substitute the rest of the wheat flour with almond, oat and coconut flour. This would lower the carbs and still give a nice crum to the bread. I plan to give it try sometime this week as she gets close to finishing the last purchased loaf. I'll let you know how it goes.
Now baking with THC/CBD extract couldn't be easier. I usually have a liter of infused coconut oil of each in the fridge and found using half butter half oil in any recipe, even breads works like magic with the sugar replacements I mentioned above which I use 50/50 always in baking, give the finished products a better sweet taste over using just one or the other.
